I am learning to love food…I wasn't really too into it, except that I needed it to live! eek!! Food was a necessary evil in my life.
There was a little bright spot in March of 2010 when I cooked from the Pioneer Woman's cookbook for a while. But I gained 15lbs in the process!! (when it's good, you want to eat a lot of it!!! eeeek!!) So I went back to not really cooking except what I had to to keep us going…
This past June, Mr Gorgeous and I made a pact to really crack down on our food budget! And one of the things that means is to NOT eat out, but cook at home. In my personal journey, I usually try to adjust my attitude with hard stuff, and for me, food is hard!
You know, it's amazing, when you set your mind to change it, with God's help, you can change it!! So, in the last few months, I have been embracing the kitchen, cooking, new recipes, and food in general!! yep, I've gained a few pounds, but overall, I've learned how to balance it all (well, cooking and eating, that is!!! eeek!!).
So, today, I want to share a few Pinterest recipes I've tried and really loved!!!

Chili's southwestern egg rolls with avocado ranch. Baked, not fried.
These were super fun to make and tasted great! I didn't like the avocado ranch dressing so much, but the egg rolls were amazing!!
cream cheese pancakes (no carbs!)
These taste like crepes!! so yummmmy!!! and they're perfect if you are eating on an Atkins plan…
My daughter made these a few weeks ago…I loved them!!!! We don't eat onions, and they were great without them!
Feta Ricotta and Spinach Rolls
Super yum!!! Love these! I'll probably make more of these for our annual Superbowl party!
King Ranch Chicken Mac and Cheese
Ohhh goodness, I haven't heard the end of how good this meal was…it's on the repeat list, for sure!!
I made these for my darling son who LOVES penguins!! They were a hit!!
AMAZING!!!!
I have on my monthly resolutions to try even more new recipes!! I even received a great cookbook from my mom for Christmas with very fun desserts. I also got a Texas cookbook from my darling best friend and a Carolina cookbook from another dear friend! Guess what I'll be studying in the next few weeks? yep, you got it…new recipes!!
